I feel your pain. I have had this happen randomly on a very large, very prominent University website that my company manages. Restoring the et_divi and other database table for the customizer settings from a backup worked for us. It’s clearly a known issue since elegant themes has a post on how to restore the settings but support has never been that helpful… I’ve only had it happen to this one site of the hundred Divi sites I’ve developed. Never could pinpoint the issue since sometimes it would just happen overnight when no one was logged in to the site. Now I just make sure and export the settings to json files regularly and when it happens again I just load from those vs messing with the database. I would be very annoyed if it were hundreds of sites like you are dealing with.
