You’ll need to create and name your child theme, however you want it to appear. This is what will house any custom css/js for your theme. EDI is accepted by ET, it’s what we use at BeSuperfly and we highly recommend it. The issues you’re referring to were early last year and have already been resolved.
I would not include any premium plugins or premium stock photography in your child theme package. Free repository plugins are fine and you’ll see an option for that to include in EDI’s settings. ET has an approved list of stock photo sources you can use for your theme.
